Chef Nittin’s passion for culinary exploration has taken him around the globe. From honing his skills on Carnival Cruise Line to working with top hospitality brands like Hilton and Radisson, he gained invaluable experience. His travels also brought him into contact with Michelin-starred chefs, farmers, and local artisans, enriching his appreciation for the craft of cooking. “There’s a different energy in knowing how ingredients are grown and combining culinary science with tradition,” he reflected.

The pandemic presented unique challenges. During his time in Thailand, Chef Nittin was one of the few staff members left running a resort as guests were unable to leave. This experience underscored the resilience of the hospitality industry and his dedication to his craft. Despite the struggles, he and his team continued to cook, ensuring everyone was fed and forming lifelong bonds in the process.

Today, Chef Nittin celebrates his culture through his signature Thali Dinner, a carefully curated North Indian meal that emphasizes wellness. Using Ayurvedic ingredients like ashwagandha and clove, he’s crafted a dining experience focused on gut health and wellness. “When you eat well, you feel well,” he explained, speaking to his commitment to health-conscious dining.
